The ingredients that you will need are:
• 4 to 5 cups blueberries
• 5 cups sugar
• 2 teaspoon acid blend
• 1/2 tsp pectic enzyme
• 1 teaspoon yeast nutrients
• 2 campden tablet (crushed)
• 1 package wine yeast
• water
Here are the steps in fermenting your own bluberry wine:
1. Crush the blueberries and put them in the primary fermenting container.
2. Add 12 cups of water in the container.
3. Add the sugar, acid blend, pectic enzyme, yeast nutrients and crushed campden tablets.
4. Stir the contents until sugar is dissolved.
5. Let the concoction sit for 24 hours.
6. Check for specific gravity. It should be between 1.090 and 1.095.
7. Add the wine yeast, stir and cover the container.
8. Stir the contents once a day for a week.
9. Strain the must, squeeze the juice out and siphon the wine to the secondary fermenting container.
10. Add water to make up for volume and cover the container with airlock lid.
11. Rack the wine in three weeks.
12. After the third week or racking, change the racking procedure by racking every three months for a year.
13. Bottle the wine.
